Thank COD it is FRY DAY! The only HASSLE in my day today is this bowl of crispy fingerlings and this CHILI LIME roasted cod…paired with some cilantro lime hummus. ? happy weekend loves! I’m out helping my boyfriend car shop today but sharing this dinner from the other night. Hoping to be able to enjoy some time outside this weekend as well as testing some new soup recipes for an event next weekend in Boston! Check my stories later to see details. Deets: chili lime roasted cod (brush cod with olive oil and coconut aminos and generously season with @traderjoes chili lime seasoning. Squeeze a little lime over top and bake on 400 for about 10 mins). Paired with roasted tomatoes, roasted asparagus, hassleback fingerling potatoes and cilantro lime hummus. Hummus: one can chickepeas (I remove outer layer with a paper towel), 3 tablespoons tahini, 3 tablespoons olive oil, 1/2 Cup cilantro, 1/2 teaspoon salt, 1/2 teaspoon red pepper flakes, 2 tablespoons lime juice, 3 tablespoons water. Blend until smooth in food processor and add water if you want it thinner. •
