Stuffed veggies have been a big DILL this week….no HASSLE meals 🙃 STUFFED ROASTED PORTOBELLOS with EGG, AVOCADO, SMOKED SALMON and KALE with a side of mini hassleback potatoes. SO good! you can make a bunch of these mushrooms ahead of time and stuff them with anything you’d like. Happy Tuesday loves! I hope you’re having a great day. Deets: Two portobello mushroom caps, scooped out and brushed with olive oil then broiled in each side for about 5 minutes. Stuffed with mashed avocado, steamed kale, wild smoked salmon, soft boiled @vitalfarms Eggs and red onion with dill and red pepper flakes. Mini hassle backs seasoned with garlic powder, thyme and salt (tutorial for these in my highlights). Then drizzled with a little tahini from @nomadsmarketplace. •
