Spicy Thai basil fried rice? – is one of my favorite go-to meals. It’s simple, quick & easily customizable??. I hope everyone had a wonderful break & some needed rest. Happy Monday, friends?
Recipe (yields 4-5 servings)
?Ingredients:
~ 4 cups cooked rice (basmati rice)
~ 1 small onion, sliced
~ 1 cup packed Thai basil
~ 1/4 cup baby corn
~ 1/4 cup bamboo shoot
~ 1/4 cup chopped red bell pepper
~ 2 Thai chilis, seeds removed
~ 8oz pan-fried tofu
~ blanched baby broccoli
~ oil
?Sauce: mix until well combined
~ 1 tablespoon ‘fish’ sauce (see recipe on highlights)
~ 1 tablespoon soy sauce/tamari
~ 1/2 teaspoon salt (adjust accordingly)
✅In a heated non-stick pan with 2 teaspoons oil, sauté onion until it turns translucent. Then, stir in baby corn, bamboo shoot, chilis, bell pepper, Thai basil & cook for 2 minutes, season with a pinch of salt.
✅Finally, add in rice, tofu, broccoli & sauce while stirring continuously until all rice is well coated. Season accordingly to your preference. (or you toss in Thai basil last if you like the green aroma?)
✨Tips to make fried rice:
~ Basmati/Jasmine rice is recommended. If using short-grain rice, cook rice with a little less water than needed
~ Fluff rice with a fork to loosen up before adding to the pan
