Chocolate chia pudding

4 tbsp chia seeds
1.5 cups almond mylk
1 tsp vanilla
1 tbsp cacao/carob powder
Pinch of sea salt .
PB Caramel .
6 medjool dates, pitted
1/2 cup water
1 heaped tbsp peanut butter
1 tsp vanilla .
Toppings

1 avocado
1 tbsp maple syrup
1 tsp vanilla
2 tsp cacao powder
3 tbsp chopped chocolate
Salted peanuts .

Make chocolate pudding by mixing all ingredients together in a jar. Set aside in the fridge to thicken for at least 15 minutes. Make caramel by adding all caramel ingredients to a food processor, blend until smooth. Set aside in the fridge. Make the topping in the food processor (no need to rinse out) by adding avocado, maple syrup, vanilla and cacao powder and blending until creamy. Blend chia pudding until smooth. Layer up jars with chocolate chia pudding, PB caramel and avocado frosting. Chill for at least 15 mins. Sprinkle with peanuts and chocolate before serving.
