Sharing some of my favorite super easy recipes and bulk meal ideas that you can prepare! I put these together because I often get asked how I manage to prepare my meals for school or work everyday so I put together a few of my go-to recipes when I want to prepare something really easy or in big batches to reheat in the morning before heading off!

1. Mexican Spiced Adlai — I cooked it in a really big batch and stuffed it in some roasted peppers while I enjoyed some as is. You can also use other grains of your choosing if you don’t have access to adlai!
2. Meaty Mushroom Meatballs and gravy — I would make the meatballs and just store them in the refrigerator along with the gravy in separate containers. Then I’d just head the meatballs up in a pan, then heat the gravy afterwards!
3. Teriyaki Fried Rice —Fried rice is one of my go-to recipes since it’s so easy and you can use up leftover rice and veggies! I would also make teriyaki sauce in big batches and just store it in a bottle in the refrigerator.
4. Stir Fried Sweet Chili Tofu — this is still my favorite tofu recipe and I would make it in a big batch and enjoy it with some rice and veggies as a really good and satisfying meal.
5. Stir-Fried Peanut Sesame Noodles— I would cook this in a big batch and use undercooked noodles so they’re not over cooked after I heat them up since I don’t like soggy noodles. I’d also add a little more sesame oil when heating it up just so it’s not dry.
6. Baked Sweet Potato Falafels — these are super easy to make and I love having them as a snack too!
7. Chocolate Chip Cookies — I store these in the refrigerator for weeks and just heat them in the oven for whenever I want something sweet! This is the version I made with almond flour but you can use regular flour!
