SIMPLE PEANUT LIME STIR FRY ✨ I was craving something warm, hearty and nourishing for lunch today, but that was also heavy on the vegetables and could be made in 15-minutes… I know, quite the list of demands, right? ? Luckily, this simple stir fry was exactly what I needed ?? I threw some frozen veggies and edamame in a pan, put rice in the instant pot (this would come together even faster if you have a grain prepped!), and topped it with leftover peanut lime sauce from last night ✨ You can find the recipe for this sauce in my free vegan sauces ebook, linked in my stories or in my highlight called ‘ebook’ ??.

As a side note, edamame is one of my favourite plant-based sources of protein ✨ Along with protein, it’s packed with fibre, iron and calcium. It’s also SO simple to have frozen and shelled edamame on hand, and throw it into pretty much any meal that needs a boost-soups, stir fries, bowls or just as a snack. Do you like edamame?! ?
