Peanut Butter & Chocolate Slice:
Base
1/4 cup almonds
1/2 cup peanuts, roasted and salted
3/4 cup dates
1 1/2 tbsp cacao powder
1/2 tbsp rice malt syrup (add another 1/2 tbsp if your dates aren’t super juicy).
Process the nuts ins food processor. Add the remaining ingredients. Once the mixture comes together transfer it to a lined pan or container.
Filling
1/2 cup rice malt syrup
3/4 cup peanut butter
2 tbsp coconut oil, melted
Mix the rice malt syrup, peanut butter and coconut oil together until combined. Transfer to the tin and use damp hands to press/smooth it out. Place in the freezer to chill while you make the chocolate.
Chocolate (or you can use store bought dairy free chocolate instead)
1/4 cup melted coconut oil
1/4 cup cacao powder
1/4 cup maple syrup
1/2 tsp peanut butter
Mix until combined, then spread the chocolate over the slice. Return to the freezer to set for neater slicing. Keep this slice cool or frozen, and defrost for a few moments before enjoying.
