Pasta w/ Creamy Red Pepper Sauce 🌿🍃 .
As you guys may know 😉 I like simple and fast recipes. This one is ready in 25 min flat and is great if you want to add in any extra veggies or protein you have in the fridge. The sauce is also what I used as one of the dips for the recent Crispy Pea and Zucchini Cakes. Serves 4 to 5 and makes a really great meal prep. 🌿🍃

I skipped the red chili flakes for the photo since I had some picky eaters keeping close tabs on me during the pics 😉 You can sub plant milk for a portion of the olive oil if desired. Have a beautiful day, friends 🌿🍃

3/4 lb. pasta of your choice
1 16 oz. jar roasted peppers, drained
1/4 cup olive oil
1/4 cup sun-dried tomatoes, drained (store bought marinated type)
1 tsp maple syrup or agave
1/2 tsp each salt, garlic powder, dried parsley and pepper
2 T capers (optional)
Garnish: finely chopped fresh parsley and red chili flakes (optional)

Cook pasta in salted water until al dente. While pasta is cooking, add all remaining ingredients to a food processor except capers and garnish. Blend until smooth. Drain your pasta and add sauce, stir gently to combine. Top with garnish. 🌿🍃🌿🍃
