PANCAKE SUNDAY pizza style 🙃 FIVE ingredient PALEO PLANTAIN PANCAKE recipe…one of my favorites. Sharing this throwback as I stare at a super ripe plantain waiting to be used and getting ready to make Easter brunch. Happy Sunday, Happy Easter, Happy Passover all! I hope you’re all enjoying your weekend. My boyfriend and I had a date afternoon/evening yesterday if you caught my stories….road bikes all around Boston and it was so fun, even the rain didn’t bother us 🙃 what are your plans today? I hope you enjoy!



Deets: Plantain pancake: 1 ripe plantain, 2 tablespoons coconut flour, 2 eggs + 1 white (or two flax eggs with 2 teaspoons psyllium husk), 1 scoop of plant protein, 1/2 teaspoon cream of tartar and 1/4 tsp baking soda…vanilla optional. Blend all ingredients until smooth. Heat up a skillet on medium high, brush with oil and pour batter evenly into skillet. Allow to cook for about 3 mins then place under the broiler to finish. This keeps it from breaking when trying to flip! Top with yogurt, berries, granola, chocolate, banana, avocado or anything you want!
