Pan-fried halloumi cheese + a huge side of arugula salad with caper-lemon dressing.
Cut a package of halloumi into a few thick slabs. Pan fry in cast iron or carbon steel pan on medium-high for about 3 min or until golden. Flip and fry for another 2-3 min until golden as well. Set aside and keep warm.
Dressing: mix together 1/2 tbsp capers, minced, a crushed garlic clove, 1 tsp Dijon mustard, 1/2 tsp dried oregano, juice and zest from 1/2 a lemon (more taste), and whisk in olive oil until you get the consistency you like. Taste and adjust seasoning with salt + pepper or more lemon juice. Toss with arugula or some assertive salad greens. Serve with halloumi cheese.
