MEAL PREP SUNDAY: SALMON SUNDAY STYLE! I have had requests for meal prep ideas, so I am making an effort to start a series this year. Today we have salmon 4 ways! It’s easy to make one batch of protein and customize it so you aren’t eating the same meals every day. Prepping a batch of pasta, hard boiled eggs, grains and veggies is easy to do in one fell swoop at the beginning of the week. Even working at home, I still prep food on Sundays, because it saves me time during the week when I’m busy and hungry! I hope everyone had a great weekend. Which dish is your favorite?



1️⃣ Mediterranean style lunch with baked Salmon, @eatbanza pasta, kale cashew pesto (posted a couple weeks ago), olives, @lef_farms greens, tomatoes and lemon.
2️⃣ Cobb salad with salmon, hard boiled egg, bacon, avocado, tomatoes, onion, @lef_farms greens and my tahini ranch (recipe on blog)
3️⃣ Mexican Fiesta with salmon, air fried plantains, cabbage, tomatoes, @lef_farms greens and a simple guacamole
4️⃣ Harvest salad with @lundbergfarms brown rice, pecans, @lef_farms greens, chopped apples and my mustard yogurt dressing. Dressing: 1 tablespoon mustard, 2 tablespoons almond milk yogurt, 1 teaspoon water, 1 teaspoon coconut aminos, 1/4 teaspoon pepper, 1/4 teaspoon garlic powder. •
