R E C I P E
2 pounds Yukon Gold potatoes, cut into fry shape
1 cup white vinegar
1 tablespoon salt
1-2 tablespoon avocado oil
Freshly ground black pepper
1 tablespoons chopped fresh rosemary
1 tablespoon thyme
Flaky sea salt, optional
1. Preheat oven to 400 degrees F.
2. Combine potatoes, 1 cup vinegar, and 1 Tbsp salt in a medium pot then add water to cover the potatoes completely. Bring to a boil, reduce heat, and simmer until potatoes are not super hard yet not all the way tender … around 15 minutes , drain then pat dry.
3. To a large bowl add potatoes; season with salt and pepper, drizzle 1-2 tbsp avocado oil, add in chopped rosemary,thyme and mix with hands making sure each potato is evenly coated . Bake for 15 minutes until golden brown. Top with any fresh herbs and flaky sea salt.
Serve with ketchup or any dipping sauce you like ✨
