BLACK BEAN + SWEET POTATO COCONUT SOUP ✨ Spring is in the air here in Toronto, but that doesn’t mean I’m done cozying up with delicious soups like this one 🙌🏼 This soup was inspired by a recipe by @mynewroots. I’ve been looking for more ways to incorporate black beans into my eating habits, because I love them but only seem to eat them with burrito bowls and veggie burgers! This unexpected mix of black beans and sweet potato in a creamy coconut soup was so warming and delicious 😍✨.
To make 👇🏼:
Sauté 2 small onions, 2 tbsp of minced ginger + 3 cloves of minced garlic over medium heat. Meanwhile, chop 1 large sweet potato and drain and rinse a can of black beans. Add the black beans + sweet potato to the pan, along with 1 tsp turmeric, 1 tbsp curry powder, 2 tsp cumin, 2 tsp smoked paprika + salt and pepper to taste. Once mixed, add 3 cups of veggie stock + 1 can of coconut milk. Simmer the soup until sweet potato is fork tender, then add 2-3 handfuls of kale or green of choice and the juice of 1 lime. Serve alone or with grain of choice + enjoy! 💛
