Hi Friends! How is your week going? 🍃🌸🌷This is the other dish that I made with the delicious roasted brussel sprouts I shared yesterday. It’s a super tasty, warm quinoa salad with chickpeas, roasted red peppers, crunchy bell peppers and cherry tomatoes. 🍅🍃🍅🍃

So easy to throw together, and has a really flavorful dressing. Customize the veggies for what you have on hand. 🍃🌷🌸

INGREDIENTS: 2 cups cooked quinoa 🌸 1 orange or yellow bell pepper diced 🌸 2 cups roasted brussel sprouts 🌸 1/2 cup roasted peppers 🌸 1 cup sliced cherry tomatoes 🌸 .
Whisk your dressing: 1/3 cup olive oil 🌸 juice of 1 lemon 🌸 1 teaspoon each kosher salt and pepper 🌸 1/2 teaspoon dijon mustard 🌸 1/2 teaspoon dried basil. 🍃🌷🌸🍃
