Hi Friends! How is your week going? ???This is the other dish that I made with the delicious roasted brussel sprouts I shared yesterday. It’s a super tasty, warm quinoa salad with chickpeas, roasted red peppers, crunchy bell peppers and cherry tomatoes. ????

So easy to throw together, and has a really flavorful dressing. Customize the veggies for what you have on hand. ???

INGREDIENTS: 2 cups cooked quinoa ? 1 orange or yellow bell pepper diced ? 2 cups roasted brussel sprouts ? 1/2 cup roasted peppers ? 1 cup sliced cherry tomatoes ? .
Whisk your dressing: 1/3 cup olive oil ? juice of 1 lemon ? 1 teaspoon each kosher salt and pepper ? 1/2 teaspoon dijon mustard ? 1/2 teaspoon dried basil. ????
