Hey friends! Celebrating my birthday with my ultimate comfort food, you guessed it, pasta ?? Sharing a SUPER Creamy Sun-Dried Tomato Cashew Sauce today with Rotini and fresh parsley. ????

The creaminess factor was off the charts, and you make the sauce in the blender which makes things so easy! The family loved this delectable goodness too, so this is a winner in my book ?? You can add a bit more salt or sun-dried tomato if you like. .

rotini and @californiasundry tomatoes in herbs and it was sooo good ?? This simple recipe is below ???

INGREDIENTS:
1 box chickpea pasta or 3/4 lb. regular or whole wheat pasta
3/4 cup unsweetened almond milk
1/2 cup soaked cashews*
1/4 cup olive oil
1.5 T apple cider vinegar (or lemon juice)
1/2 tsp kosher salt
1/2 tsp pepper
1 cup sun-dried tomatoes in oil (drained)
1/4 cup packed fresh Italian parsley, chopped (optional)
Cook pasta according to package instructions. Blend the additional ingredients, except for herbs, on high for 2 to 3 minutes, stopping along the way to scrape down the sides if needed. Pour the sauce over the warm pasta and garnish with fresh herbs such as parsley. ??
