Have to say, I am killing the fiber game lately ? As though that’s a thing ? A meatless Monday bowl that held me full for hours! ?? Love that!?

Calories: 346 Carbs: 42g Fat: 16g Protein: 13g Fiber: 15g. This was 1/2 cup each cooked lentils and quinoa, around one cup of roasted cauli, 1/2 avocado, arugula, small drizzle tahini, splashes of apple cider vinegar, sprinkle of hemp seeds, and some (surprise, surprise) blistered cherry tomatoes! ??

When cooking the lentils, I used water and Better Than Bouillon veggie broth “paste” I’ll call it. It is so good and adds tons of flavor! Also cooked them with diced onion, carrots, celery, italian seaaoning and garlic. Roasted the cauli with a small amount of avocado oil and seasonings. ⭐?
