Flourless Chocolate Chip Blondies
(makes 8 pieces)
80g almond butter
60g coconut sugar or brown sugar
1 flax egg (1 tbsp flax seed meal + 3 tbsp water)
3 tbsp aqua faba (chickpea brine)
½ tsp baking soda
80g dark chocolate chips (optional pinch of salt) *

Add ingredients for the flax egg to a small bowl and let sit until gel consistancy (about 3-5min).
In a big bowl stir together all other ingredients except the aqua faba.
Add the 3 Tbsp aqua faba to a medium size bowl and whisk until foamy (by hand whisking takes 4-
5 min). Now add the flax egg to the almond-butter mixture, stir until well combined and then fold in the
foamy aquafaba.
Line a loaf pan (20cm) with parchment paper and add the batter to the tin, using a spoon or spartula.
Spread evenly and bake for 15-20 min until top is golden.
Let cool down completely (that step is important) before slicing and eating. The blondies will firm
up the cooler they get. *
