(Edit: Recipe now on my blog!) A little sneak peak of the bowl I had for lunch earlier today! Really can’t wait to share the recipe for this tofu because it was really good (especially when freshly cooked! Had a few pieces before I shot them haha). __
Any guesses on how I cooked the tofu and what I coated it in? Clue: it’s very Asian-inspired! ? oh and this bowl also has 2 types of mangoes—apple and green Indian mangoes! The apple mangoes are pickled with some red onions and cilantro while the green Indian mangoes were just thinly sliced! Have some calamansi (Philippine lime) and sliced cherry tomatoes here too!

These are all on a bed of some bagoong (“shrimp” paste) fried rice! I used @veganmomph’s bagoong and mixed it with some brown rice! Have you ever tried shrimp paste?
