EASY PEASY CHICKEN SATAY with TWO DIPS: CREAMY HONEY CILANTRO LIME AND AN ALMOND GINGER DIP! Happy Thursday loves. Made this the other night for dinner and it was DELICIOUS! I used @greekgodsyogurt plain Greek-style yogurt to make the dips. I love this yogurt, because it’s super creamy and thick, has no tang and blends well into dips. It’s also super tasty on its own! I’ve been using it to make my salad dressings lately. The flavors in this meal were fantastic. I ended up making it two nights in a row ? Which dip would you choose? Deets: CHICKEN: one pound of boneless chicken (breast or thigh) pounded thin and cut into strips. Marinate for 30 mins in a bowl. MARINADE: 1 tbls coconut aminos, 1 tbls aminos, juice from 1/2 lime, 1 tsp curry, 3 tbls full fat coconut milk, 1/4 tsp salt, 1/4 tsp pepper, 1 clove garlic minced, 1 tsp honey. Place on skewers and bake in a pan for 12-15 mins. (If you want a crisp outside then quickly sear for 1 min per side on medium high heat before baking).

CILANTRO LIME DIP: 1 cup yogurt, 2 tsp lime juice, 2 tsp honey, 2 tsp tahini, 1/4 tsp Salt, 1 tbls cilantro, Optional: a few drops sesame oil. Whisk until smooth.

ALMOND GINGER DIP: 2 tbls yogurt, 2 tbls coconut aminos, 1 tbls tamari soy sauce or liquid aminos, 1/2 tsp ground ginger, 2 tsp maple syrup, 3 tbls almond butter, 1/2 tsp sesame, 1 tbls lime, 1 tsp minced garlic, 1/4 tsp sriracha. Whisk until smooth. •
