Delicious vegetable curry bowl😋
Happy Monday, my Insta friends🤗, hope you had a wonderful weekend. Vegetable curry is probably one of the best way to add a lot of colorful veggies to up your rainbow food intake, agree?😊 Sharing a simple curry made with my homemade chili paste (sambal). It’s easy, quick and delicious, best for meal prep too, see below note about okra. Enjoy!
Recipe (serves 4)
~ 2 -3 cups chopped cabbage, ~ 1 cup chopped green beans, 1/2 cup okra – blanch both veggies
~ 1 small 🍆, cut into long rectangles
~ 1 small potato, cubed and boiled
~ 2 small 🍅, blend until fine
~ 2 tablespoons homemade sambal chili paste (check few posts back)
~ 1 tablespoon curry powder, dash of turmeric powder
~ 4 cups of veggie stock
~ 1 cup coconut milk
~ handful of curry leaves
~ oil, salt, maple syrup to taste
~ cooked grain
In a heated pan with 2 teaspoons oil, grill 🍆 until lightly brown, remove and set aside. Then, stir in curry leaves, and cook until fragrant.
Add in 🍅 paste, sambal (with chili oil), curry powder, and veggie stock, all remaining veggies and potatoes, except okra. Let simmer for 5 minutes or until cabbage is cook but not too soft. I love my veggies crunchy.😊
Season accordingly, and stir in coconut milk. Finally, add okra right before serving. Serve warm with your favorite grain. You may add tofu or pair with any protein to complete your meal.
