Sauce: Saute up 1 red onion, 1 medium diced eggplant, a generous pinch of salt and pepper and several cloves garlic in olive oil for about 10 minutes until eggplant is cooked down. Add a pint of sliced cherry tomatoes, 1 T each of dried oregano and basil. After about 5 minutes, add crushed tomatoes and cook on low simmer for about 10 minutes. Add 1 teaspoon kosher salt and 1/2 teaspoon pepper taste for seasoning. ???
