Delicious, simple and so nutritious! Spaghetti squash with Eggplant Marinara. 🍝 What are your favorite ways to eat spaghetti squash? We all know it doesn’t taste like spaghetti, but hey, it can be super delicious and SATISFYING and for some reason, is strangely fun to have a spaghetti shape on your fork! 🍅🍝🎉

Sauce: Saute up 1 red onion, 1 medium diced eggplant, a generous pinch of salt and pepper and several cloves garlic in olive oil for about 10 minutes until eggplant is cooked down. Add a pint of sliced cherry tomatoes, 1 T each of dried oregano and basil. After about 5 minutes, add crushed tomatoes and cook on low simmer for about 10 minutes. Add 1 teaspoon kosher salt and 1/2 teaspoon pepper taste for seasoning. 🍝👍🎉
