Happy FRY DAY!!! Celebrating today with these new CAJUN SKILLET FRIES!!! Because everything is better in a skillet 🍳 🙃 Plus, the potatoes get so crispy when you bake them in a skillet…and once these babies are done, add some greens, avocado, tomatoes and eggs… BAM lunch is served. Busy working on my web site plans today and getting a haircut that is long overdue! My sister is coming over for dinner tonight to see my new place for the first time…looking forward to seeing her! What are your plans this weekend?



Deets: mini Yukon gold potatoes cut into fries 🍟 then tossed in a little coconut oil and seasoned with Cajun seasoning. Place the fries in a cast iron skillet (or oven proof skillet)…I used my @lodgecastiron, and bake on 450 for about 20 minutes, shaking the skillet every 5 minutes to cook them evenly. Take it out of the oven when nice and crispy: top with some greens, tomatoes, avocado and @vitalfarms fried eggs (I added a little pine nuts, vegan cheese and cilantro too)…and I had some @goodfoodforgood ketchup because it’s delicious 😋 •
