Coconut Lime Noodles with Tofu and Snowpeas 🌿🍃 Flavored with lemongrass and ginger 🍃🌿 This dish is so full of flavor and super comforting, hope you can give it a try!

1 package extra firm tofu drained and pat dry
1 tsp oil
1 cup snow peas
5 cloves garlic minced
1 cup leeks thinly sliced

Sauce: whisk in bowl
3 tbsp light soy sauce
1 tsp ginger paste
1 tsp lemongrass paste
2 tbsp sweet chili sauce
Juice of 1/2 lime
1 tsp sriracha
2 tsp cornstarch + 4 tsp water mixed

In large pan, cook crumbled tofu for 5 minutes in a bit of oil stirring often. Add, snow peas, garlic and leeks, cook 3 min. Push everything to the side and add sauce. Let bubble for a min, then stir to combine.
Coconut Noodles
1 can light coconut milk
Juice 1/2 lime
1 to 1.5 tbsp chili garlic sauce
1 tsp lemongrass paste
1 tsp ginger paste
1/2 package rice vermicelli
Cilantro and chili flakes for garnish

In large pan add all ingredients except noodles and stir well. Heat to low boil, add noodles and slowly and gently pull them apart with a pair of forks as they cook. Once submerged in liquid, cover and turn heat to low until cooked. These cook very quickly. Serve with tofu stir fry and garnish. .
