Celebrating Meatless Monday with my HEMPSEED PESTO PASTA! Made this last week, and it was so freaking good. Seriously, what is better than pesto and eggs ? So I had to throw an egg on top for some added protein ?‍♀️ I also blended in some of @germinal.organic Rosemary crackers to the pesto this time and it added such a yummy flavor rather than using cheese or nutritional yeast. Happy Monday loves!!! Not going to lie, feeling overwhelmed recently with work, but slowly getting there. Hope you all had an amazing weekend!



Deets: chickpea pasta with pesto Paired with some spring asparagus, tomatoes, egg, olives and greens. Pesto Recipe: 1/4 Cup Hemp Seed, 1/4 Cup olive oil, 1 tablespoon lemon juice, 1/2 teaspoon salt, 1/2 Cup parsley, 2 cups basil, and I added 4 crackers from @germinal.organic instead of cheese or nutritional yeast. Add all ingredients to food processor and process until smooth!
