buckwheat pancakes (gf)⠀
– 1 cup almond milk⠀
– 1 tbsp apple cider vinegar⠀
– 1 tbsp ground flaxseed + 3 tbsp water⠀
– 1/2 tsp vanilla extract⠀
– 1 cup buckwheat flour⠀
– 1 tbsp + 1 tsp baking powder⠀
– 2 tbsp coconut sugar⠀
whisk together flaxseed and water and set aside for a few minutes until thickened. in the meantime, combine almond milk and vinegar and let sit until curdled. ⠀
mix together dry ingredients in a separate bowl. stir the flax egg into the liquid mixture along with the vanilla extract, and pour slowly into the dry ingredients, stirring until just combined (do not over-mix). using a 1/4 measuring cup, pour batter on a preheated non-stick griddle or pan, and cook for 2 minutes or until the edges are dry and several bubbles appear on its surface. flip and cook for another 2 minutes on the other side.
