Blueberry Almond Salad w/ homemade creamy balsamic vinaigrette ??? Looking for a yummy salad for 1? Here’s a quick recipe below! Hope you’re enjoying today ? It’s incredibly sunny and not a cloud in the sky here, and we’re soaking it up ???

Salad: 1 huge handful spring mix or arugula, 1/4 cup slivered almonds, 1/2 cup blueberries, 1 T pepitas, 3/4 cup cooked quinoa. Dressing: whisk together juice of 1/2 lemon, 1/4 cup nutritional yeast, 5 to 6 teaspoons balsamic vinegar depending on how thick or thin you prefer your dressing to be, and 1 teaspoon olive oil. Olive oil is optional, and you can substitute water. Add salt and pepper to taste, and a pinch of cayenne if you’re feeling spicy ?? I probably wouldn’t need this entire dressing amount, but all depends on mood of the moment ??
