INGREDIENTS:
14 oz rice noodles
.
Dressing:
2 tbsp peanut butter
3 tbsp soy sauce
3 tbsp rice vinegar
2 tbsp sesame seed oil
1/2 tbsp cane sugar
1 thumb ginger
2 garlic cloves
.
Toppings:
red pepper
green onion
carrots
cilantro
hot sauce
roasted peanuts
lime edges
.
Steps:
1. Cook rice noodles according to package instructions. Drain & rinse with cold water.
2. Blend all the sauce ingredients
3. Add sauce to rice noodles and mix well.
4. Top with carrots, red peppers, green onions, cilantro, roasted peanuts, lime wedges.
