A simple stir-fry for a busy day! A quick and yummy meal idea that can be used with whatever veggies you have. Soba noodles in a delicious spicy stir fry sauce with broccoli florets and peppers. ??

I used about half a package of soba noodles, 2.5 cups of chopped broccoli florets, and about 1.5 cups of sliced mini peppers (or any bell peppers will work!). While the noodles are cooking, saute the veggies in a small amount of oil and water until the broccoli turns bright green and crisp-tender. ✨?

The sauce: 2 T hoisin sauce, 2 T rice wine vinegar, 1/4 cup low-sodium soy sauce, 1 T sesame oil, 1 T maple syrup, and 1 T chili garlic sauce (spicy!!). ??✨

Top with sesame seeds and cilantro ????
