Spicy potato & masala chickpeas bowl?
Happy Good Friday, everyone?. Today, I’m sharing what we had for dinner but assemble it into a bowl for you. In Chinese culture (at least in my family), we love to have 3 dishes and a soup to complete a meal. Recipe for each dish below?

Spicy ?: 3 potatoes, washed and cut into cubes. Preheat oven to 400F, bake potatoes on an oiled sheet pan for 15 mins and broil for another 10 mins on low until crispy. In a heated pan with 1/4 cup water, add 2 tablespoons ketchup, 1 tablespoon sugar, 1 tablespoon soy sauce and 1 teaspoon chili flakes, cook until sauce thickens. Stir in potatoes and coat well. (or use 1/4 cup water + 3 tablespoon sweet chili sauce)

French beans stir fry: 2 cups of french beans, washed and cut diagonally. In a heated pan with 2 teaspoons oil, sauté 3 cloves of garlic until fragrant. Add beans, 1/4 cup water and stir fry until beans are fully cooked through. Season with 2 teaspoons soy sauce and salt. This is a super simple stir fry.

Masala chickpeas (recipe adapted from @minimalistbaker ):
In a food processor, blend 1 medium onion, 3 cloves of garlic, 2 slices of ginger until finely ground. In a heated pan, sauté onion mixture until fragrant, add 1 chopped Thai chili & jalapeno, 1 can of crushed tomatoes, 1.5 tablespoons of each (cumin, coriander powder, curry powder), 1 tablespoon of coconut sugar, 1/2 teaspoon turmeric powder, 2 cans of chickpeas and simmer for 20 minutes. Adjust taste accordingly and stir in 2 tsp garam masala. I love to add this last.?
