Avocado Kale Salad with roasted sweet potatoes.

Happy FriYay, my Insta friends ?. Such a late posting today, not my usual morning hour.?
I have been busy this week with kids’ festivals and recitals, so easy meal like this salad is perfect for me.?
I have never thought of massaging kale with avocado, have you tried? Thank you to @veganreset ?cookbook by @kimjuliehansen now I know this tip!??

Recipe from @veganreset cookbook with minor adjustment based on what I have in the kitchen?
(Makes 2 servings)
Ingredients:
~ 2 small sweet potatoes
~ 1 bunch kale, washed and stems removed
~ 1 avocado
~ 1/4 cup raw pumpkin seeds & sunflower seeds
~ 1/4 teaspoon curry powder
~ sea salt
~ oil

Prepare ?: peel off skin but you can keep it if it’s organic, and cut into cubes. Rub ?with 1 teaspoon of oil, a pinch of salt and bake them at 350F for 45 minutes. At the same time, rub pumpkin seeds and sunflower seeds with 1 teaspoon oil, 1/4 teaspoon salt and 1/4 teaspoon curry powder. Then toast them in a toaster oven at 350F for 10-12minutes or in a skillet over high heat. Set aside.
Sweet potatoes and seeds can be prepared ahead of time. However, if you have hungry family members like me, it won’t stay long?

In a large bowl, massage (really ? this method) avocado into kale and sprinkle with a pinch of salt. To serve, top kale with roasted sweet potatoes and seeds. What kind of protein would you add? I added @veganreset ‘tuna’ chickpea salad, soooo good!!?

*I baked my sweet potatoes at 490F until crispy on the outside, about 15-20minutes, then, broil on low for 5 minutes.
