?Indian-spiced cauliflower + Dijon maple chickpeas salad?This was super easy to whip up and next level delicious. ☀️We are busy packing to go visit family in Jamaica and I realized a little too late that the girls have no short sleeves that fit! But my brilliant and resourceful IG mom-friend Joanne @the_balanced_kitchen pointed out that I all I really need are some good scissors ??. Anyone else busy making t-shirts today? Happy Sunday lovelies.
?Recipe: ?Cauliflower: whisk together 2 tbsp olive oil, 1 tsp ground coriander, 1 tsp turmeric, 1 tsp curry powder, 1 tsp cumin seeds, salt to taste. Roughly cut 1 head cauliflower into florets. Use hands to coat each piece with the spice oil mix. Rub well. Roast at 400F on parchment-lined baking sheet until just tender. Squeeze splash of fresh lime juice on florets. ?Dijon maple dressing: whisk 1 tbsp Dijon mustard, 1 tbsp maple syrup, 2 tbsp apple cider vinegar. Slowly drizzle 1/3 cup extra-virgin olive oil while whisking until fully incorporated. Salt and pepper to taste. Use to coat 1-15oz chickpeas (rinsed and drained.) Use remainder for salad leaves and avocado.
