Vegan Seitan Satay with homemade peanut (free) sauce! ⠀
So, here it is- Vegan Chick’n (Seitan) Satay with Homemade Peanut (free) Sauce! Hope you all enjoy. ❤️?⠀
[Chick’n Satay]⠀
• 4 servings of seitan chicken or tofu, cut into small pieces • 1 tsp turmeric powder⠀
• 1 tsp ground cumin⠀
• 1 tsp ground coriander seeds⠀
• 1 cup coconut milk⠀

1. combine all ingredients and marinate for an hour before transferring the seitan/ tofu onto bamboo skewers.⠀
2. Grill until nicely seared. ??⠀
[Dipping Sauce]⠀
• 10 dried chilies, soaked overnight⠀
• 100 g shallots, peeled⠀
• 6 cloves garlic, peeled⠀
• 4 coriander roots* (optional, if you couldn’t find it just skip)⠀
• 1 tsp ground cumin⠀
• 1 tsp ground coriander seeds⠀
• 1 can (400 ml) coconut milk⠀
• 2 tsp Himalayan salt (1 tsp if using table salt)⠀
• 1/4 cup coconut sugar or organic sugar⠀
• 2 tbs tamarind paste⠀
• 2 tbs tahini • 1 cup toasted almonds, coarsely ground (NOT almond flour or almond meal)⠀

Instructions:⠀
1. Blend shallots, garlic, soaked chilies, coriander roots, salt, cumin, coriander, and coconut milk together until smooth in a food processor or a blender.⠀
2. Transfer to a pan or a pot, simmer on low heat until fragrant (about 5-7 minutes)⠀
3. Add coconut sugar, tamarind paste and tahini. ⠀
4. Mix well- make sure all the sugar has dissolved before adding ground toasted almonds just before serving with your Seitan/ Tofu Satay.⠀
