⁣Nasi lemak – coconut milk rice⁣?
⁣Hello everyone?, sharing one of my favorite dishes growing up, usually sold in its simplest form filled with coconut milk rice, cucumber, sambal, ?, anchovies, boiled egg wrapped in banana leaf. You will want to try this when you visit Malaysia? My vegan version is loaded with rendang (dried curry), ‘anchovies’, roasted ?, & homemade sambal.? Ingredients may look long but I have sambal, ‘anchovies’, & peanuts ready.

Recipe (serves 1-2)⁣
?Rendang ingredients:⁣
~ 1 cup cauliflower florets (batter using previous recipe, shallow fry or baked)⁣
~ 3 tablespoons finely grated ?, 1/4 cup ? milk, 1 tablespoon sliced kaffir lime, 1 teaspoon homemade sambal, salt to taste⁣
✔️In heated non-stick pan without oil, toast coconut until lightly brown, add coconut milk, sambal, and kaffir lime, let simmer and season with salt. Then, add in fried/baked cauliflower florets and continue to stir until sauce dry up. ⁣
?’Anchovies’ ingredients:⁣
~ 1 nori sheet, 2 sheets of beancurd sheets/yuba skin (cut into same size as nori), 2 tablespoons cornstarch as glue⁣
✔️In a small pot, cook cornstarch with a little water until it turns pastey. Lay yuba skin on a chopping board, brush with water, then cornstarch paste & layer it with nori, repeat with paste & finish off with yuba skin. Cut into strips and pan fry until crispy. Season with salt immediately. ⁣
?Coconut rice ingredients:⁣
✔️Wash 1 cup of basmati rice until water turns clear. Using a rice cooker, place rice & pandan leaves in, add enough water, 1/2 inch over the rice & cook. Then, add 1/4 cup ? milk and 1/4 teaspoon salt and cook rice again. Fluff with fork and discard pandan leaf⁣ ?Sambal:⁣
~ 1 medium onion – sliced, 2 roma tomatoes – blend until fine, 3 tablespoons homemade sambal, salt and oil⁣
✔️In a heated non-stick pan with 1 teaspoons oil, sauté onion until soft, add tomato sauce, cook until sauce reduced to half and stir in sambal. Season if needed.⁣

I love to serve them on a cleaned banana leaf. Let me know what you think & have a great Wednesday!
