WATERMELON SALAD 🍉✨ There’s a few foods I can’t get enough of this summer, and watermelon is definitely one of them (the other is peaches)- The perfect refreshing snack on a hot day ☀️ Watermelon is a great source of potassium, vitamin C, vitamin A and is so hydrating in these summer months 💦 I paired it with cucumber slices, basil and a generous squeeze of lime here for the perfect lil’ summer side salad ✨.

If you’re wondering how to pick the perfect watermelon, I always look for one that has a nice, vibrant yellow patch on it. This is where the watermelon would’ve sat on the ground, and the vibrant yellow colour means that it’s likely ripe! I also listen for a hollow sound, and make sure the two ends are firm. This dish is so easy to make that a recipe seems silly. I just chopped all the ingredients and combined them (as stated above). I love pairing this with mint if I have it on hand, too! ✨
