Warmer weather means salad. ?? Try this smashed cucumber salad with tahini-chili oil sauce dressing. So easy, healthy and refreshing.

Whack some Persian cucumbers with a rolling pin or the side of a wine bottle until slightly split. Then cut lengthwise and into half-moons. Place in bowl, sprinkle on salt and let sit for about 10 min. Then drain out excess liquid.

In a separate bowl, mix tahini with a bit of warm water until loosened. Then stir in Chinkiang or black vinegar (use balsamic if you can’t find either), chili oil sauce, crushed raw garlic, sesame oil, a pinch of raw sugar, a splash of soy sauce. Mix well and adjust ingredients to your taste. Drizzle onto drained cucumbers, toss well, and top with crushed roasted peanuts or almonds.
