Made this quick and delicious salad before vacation last week, to get in some serious health food before leaving! 👍🌿🍃😁

I’m excited to share some pics in my upcoming post and stories from vacation! It was totally long overdue, to have a sunny beach getaway 👌🙌 Hmm, maybe 10 years overdue, something like that? 😂 #betterlatethannever 🌞🍜🍨🌞

Sharing the recipe below! Hope you enjoy this bowl of healthy goods 🙏🌿🌞

In a large bowl, combine these:
1 cup cooked quinoa
1/2 cup diced roasted carrots
1 cup cooked peas
1 cup corn (I grilled mine, but not required)
1 red bell pepper, thinly sliced
1/2 cup edamame
1 cup chopped cucumber
1/2 cup thinly sliced green onion

Whisk together the dressing ingredients below, and add just enough dressing to lightly coat the salad. You may have extra dressing to enjoy later 👍. If you love lemon juice like I do, you can add juice of the whole lemon 🍋
1/3 cup olive oil
2 T red wine vinegar
Juice of 1/2 lemon
1 tsp dijon mustard
1/2 tsp kosher salt
1/2 tsp pepper
2 cloves minced garlic (optional)

Enjoy!
