Veggie Quinoa Salad ???

Made this quick and delicious salad before vacation last week, to get in some serious health food before leaving! ????

I’m excited to share some pics in my upcoming post and stories from vacation! It was totally long overdue, to have a sunny beach getaway ?? Hmm, maybe 10 years overdue, something like that? ? #betterlatethannever ????

Sharing the recipe below! Hope you enjoy this bowl of healthy goods ???

In a large bowl, combine these:
1 cup cooked quinoa
1/2 cup diced roasted carrots
1 cup cooked peas
1 cup corn (I grilled mine, but not required)
1 red bell pepper, thinly sliced
1/2 cup edamame
1 cup chopped cucumber
1/2 cup thinly sliced green onion
Whisk together the dressing ingredients below, and add just enough dressing to lightly coat the salad. You may have extra dressing to enjoy later ?. If you love lemon juice like I do, you can add juice of the whole lemon ?
1/3 cup olive oil
2 T red wine vinegar
Juice of 1/2 lemon
1 tsp dijon mustard
1/2 tsp kosher salt
1/2 tsp pepper
2 cloves minced garlic (optional)
Enjoy!
