Recipe: saute 1 medium chopped onion in 2 T avocado or coconut oil. Add 2 diced carrots, 5 minced garlic cloves and 2 diced celery stalks and cook for 10 minutes on medium low heat. Add the following and simmer until tender: 1 T each oregano and basil, 1 teaspoon garlic powder, 1 large bay leaf, 1 teaspoon kosher salt, 28 oz. can diced tomatoes, 5 to 6 cups vegetable broth (depends how thick you like the soup), 1/2 cup dry orzo, 1.5 cups diced potato. Cook in 2-3 cups baby spinach, juice of 1 lemon, and 3/4 cup optional chopped marinated artichokes for the last few minutes. Taste for seasoning and add more salt if desired. Don’t forget to remove the bay leaf ? ???
