Trying out a new way to cook salmon. Cut a 1 lb. fillet into 1/2-inch thick slices, sear in hot pan on med-high heat for about 2 1/2 min on one side until golden brown, carefully flip and cook the other side for about 30 sec. Serve with a ginger-scallion oil sauce.

Ginger scallion sauce: finely mince scallions and peeled ginger, mix with a splash of fish sauce, grind in some white pepper, and add a good amount of grapeseed or any neutral oil. Add a bit of salt to taste. Let sit for at least 15 min so the flavors combine and the ginger/scallions soften up a bit. Serve with fish and a million other dishes.
