These Franzbrötchen are one of my favorite sweets! This fragrance alone ? – and precisely because they are so delicious, they don't need any frills and unusual variations, I think. They are not complicated at all and go faster than expected ??♀️. My Franzbrötchen are made of yeast dough.
Dough:
250 g milk
1/2 cube of yeast (alternatively dry yeast)
6 tablespoons of sugar
?If you use dry yeast you can also use erythritol or xylitol.
500g flour
1 pinch of salt
1 packet of baking powder
1 egg yolk
100 g of oil
Nut filling:
100 g almonds (ground)
100 g hazelnuts (ground)
60 g sugar or Xucker Light
1 egg
1 pinch of cinnamon
70 g milk
Preparation filling:
▪️Stir the dry ingredients in a bowl first. Then stir in the milk, egg, xucker and cinnamon with a hand mixer and stir in the nuts.
Preparation of dough:
Warm up the milk slightly. Then stir in the yeast and the sugar. Add flour, salt, baking powder, egg yolk and the oil and stir with a dough hook.
▪ Roll out the dough on a floured surface and spread the nut filling over it.
and roll it up from the long side.
Cut the dough roll into 4 cm slices and use a wooden spoon handle to press the slice downwards.
▪️Place the Franzbrötchen on two baking sheets covered with baking paper.
Preheat the oven to 200 ° C (top and bottom heat).
Whisk egg yolk and milk and brush them with it.
Bake in a preheated oven for approx. 15 minutes at 200 ° C.
