Roasted Eggplant/Chickpea Gyros ??? , I decided to venture into gyro territory ? I chose eggplant to be the star of the show, & cut them into steaks, & then roast. Once you get all the water out of this fruit (yes it’s a fruit) by sweating it with salt ? buh bye water? it literally acts like a sponge picking up all those delicious Mediterranean flavors ?. I also used the herb marjoram for the first time!! It’s so lovely, like a delicate sweet oregano. I topped it with a creamy tzatziki sauce which provides the perfect flavor contrast. Hope you enjoy!! My family loved it except the teenager who was out somewhere, eating something else after squash practice ? If you make any of my recipes, be sure to tag me so I can feature you in my stories.
