SAVOURY LENTIL BOWL ✨ I don’t know about you, but lentils are one of those legumes that I happen to forget about all the time. I use chickpeas, black beans and edamame on a daily basis, but lentils always seem to slip my mind! I’ve been trying to incorporate them more into my everyday eating pattern, since they’re incredibly high in protein and iron, and this bowl is the perfect way to do it ✨.
To make 👇🏼:
Cook brown rice and lentils as per package instructions (I use half veggie stock as a replacement for water to make them even tastier). Meanwhile, microwave or cook frozen broccoli and any other veggies of choice- I opted for kale and mushrooms.
