ROASTED CURRIED CAULIFLOWER with SESAME MAPLE CASHEWS ?

Curried roasted cauliflower
INGREDIENTS
1 head of cauliflower, chopped into florets
1 tbsp avocado oil
1 tbsp curry powder
1 tsp garlic powder
pinch of salt
Method:
1.Preheat oven to 400 degrees F. In a large bowl place cauliflower florets then drizzle over avocado oil, add curry powder, garlic power and salt. Toss the cauliflower making sure each cauliflower is coated. Place the cauliflower on a baking sheet lined with parchment paper. Bake in oven for 25-30 minutes or until golden brown.
Sesame maple cashews
INGREDIENTS
1/2 cup cashews
3 tbsp pure maple syrup
1 tbsp coconut oil
1/2 tsp cinnamon
3 tbsp sesame seeds
Method:
1.In a bowl, add cinnamon powder to cashews and mix well.
2.In a saucepan over medium heat add coconut oil. When the coconut oil is melted add maple syrup into the pan and stir with a wooden spoon.
3.When the mixture starts to thicken, quickly add the cashews. Stir and combine, ensuring all the cashews are coated.
4.Allow cashews to roast and glaze nicely for about two more minutes, then remove from the pan. Lay the cashews onto a plate and let the nuts cool for 2 minutes. Sprinkle sesame seeds! .
