Roasted cauliflower, green bean and farro salad! 🌱 If you’ve never had farro, I like to think of it as yummy alternative to brown rice or quinoa. It soaks up flavors like a dream, and is fairly forgiving if you happen to overcook it a wee bit 😳🙋This salad tastes fresh and bright, with lots of texture and flavors 🌈⭐ Great for a meatless but super hearty meal. Combine roasted cauli, cooked farro, steamed green beans, thinly sliced fennel, capers, fresh parsley, minced raw red onion, roasted carrots, and chickpeas. Mix with a delicious roasted garlic vinaigrette. 🌱🌱
