Relying on easy + quick meals like this savoury tofu scramble to get me through this week ✨It’s just one of those weeks where it feels like there’s so much to do with not enough time, which is where delicious combos like this come into play ?? I love tofu scramble because you can use whatever veggies you have on hand and it seriously takes less than 15 minutes to throw together ?.

To make ??:
Chop 1 small onion, 2 cloves of garlic, 1/2 bell pepper, a handful of kale and any other veggies you like. Sauté the onion and garlic in a pan until the onion is translucent (about 5 minutes). Add the other veggies + crumble in a block of tofu as well. Add 1 tsp turmeric, 1/2 tsp chili powder, 1/2 tsp smoked paprika, 3 tbsp nutritional yeast + a pinch of salt + pepper (to taste). Sauté for another 5 minutes until tofu is cooked through. You can add a splash of plant based milk if the tofu is sticking to the bottom of the pan. Serve in a wrap, on toast, or on its own for the most delicious meal or snack ?
