People often get surprised when they find out I was vegan my whole college life. It wasn’t easy being vegan in a not-so-vegan-friendly country with little to no vegan options in restaurants (and most especially on campus canteens and food stalls, in my case) all the while dealing with that adjustment phase of being in a new environment and meeting new people, but I managed. It took a lot of time, dedication, and planning. There were days when I’d wake up earlier than usual to prepare breakfast, lunch, and dinner, that I would pack for school. I was basically lugging around a day’s worth of meals in my backpack while rushing from one building to the next to get to my classes.

There were days when I’d eat what I like to call my ‘emergency food’—basically food I could easily just open and heat up for days when I really didn’t have time to cook or prepare my food. These were usually canned baked beans and corn. I also sometimes had canned soups stocked in the pantry.

I went vegan in 2015 and I’ve seen a huge difference in the vegan scene in Manila from 4 years ago to today. There are so much more options available now but still not as mainstream as I hope it to be (one day!). In the mean time, we still of course have to plan our meals ahead especially for those like me who have busy days in school or in the office. It really takes time and sacrifice, and sometimes we look for convenience but at the end of the day the choice to be vegan is a personal one, and it’s totally up to us if it works or not. For me it was a big sacrifice but I don’t regret a single moment. I never felt like I was missing out on anything even if I saw my friends enjoying certain food I couldn’t eat because at the end of the day, I was at peace with myself and my choices.

SO ANYWAY, just want to share these Katsu Sushi Sandwiches or Onigirazu that you can prepare beforehand and enjoy for the coming days. They’re also super perfect for eating on-the-go!??
