?Mushroom Tacos?
My daughter’s perfectly groomed nails have been put to good use!
?Recipe
Sauté 1 thinly sliced shallot in olive oil until nice and crispy. Remove from pan. Add a little more olive oil and sauté 1lb thickly sliced crimini mushrooms, sprinkled with a touch of salt, in batches for about 5 mins each side. Remove from heat and add splash of sherry vinegar and scallions to mushrooms. In a separate pan, heat 1 tbsp olive oil and sauté 4 sliced garlic cloves. Add 1 bunch of roughly chopped Lacinato kale until just cooked down- about 4 minutes. Cook 1c rice as per packet directions. (I used @lotusfoods red rice.) Heat tacos on skillet. Layer tacos with rice, kale, mushroom scallion mixture, sliced avocado, chopped poblano peppers and a squeeze of lime. .
