Looking for a nourishing, warming soup that won’t break the bank? To make ??:
In a large pot sauté one diced yellow onion, 4 cloves of minced garlic + 2 tbsp of minced fresh ginger for about 3-4 minutes until the onion is translucent. Meanwhile, dice 1 sweet potato, 2 yellow potatoes + 2 medium carrots. Add to the pot, along with 2 cups of frozen cauliflower + 1 cup of green lentils. Then add 1 can of coconut milk, 4 cups of veggie stock, 1 tbsp turmeric, 2 tsp curry powder, 1 tsp smoked paprika + salt and pepper to taste. Let come to a boil, then cover and reduce to a simmer for 25-30 mins until lentils are cooked and potatoes have softened. Add the juice of 1 lemon + a few handfuls of spinach or kale and enjoy! ?
