Homemade pork + kimchi potstickers with a sriracha + sweet-chili dipping sauce, on a bed of Napa cabbage-scallion slaw, like a dumpling salad, which sounds kinda weird, but it actually works! Hot crispy potstickers tempered by the cool crunchy tangy veg. Use store-bought dumplings to save time, but you can also make your own using my recipe (link in bio!)

Napa cabbage slaw: I like using Napa cabbage here because it’s tender, juicy, and crunchy at the same time. Feel free to substitute with regular green cabbage instead! Thinly slice a small Napa cabbage (or ¼ of a large one) and place in a large bowl. Toss together with sliced scallions, cilantro (mince the tender stems and add to the salad for less food waste), toasted sesame seeds, rice vinegar, a dash of soy or fish sauce and toasted sesame oil. Taste, adjust seasoning and set aside.

Fry up some potstickers and serve with the slaw for a quick, delicious and satisfying dinner salad. Don’t forget the sriracha + sweet-chili dipping sauce for the dumplings! ??
