Homemade breakfast sausage, fried eggs, topped with a bit of lemony arugula. A perfect meal for any time of day, if I may say so!

With your hands (gloved hands, maybe) lightly mix 2 lbs. ground pork (or chicken), some dried thyme, a bit of nutmeg, lots of minced fresh sage, 1 Tbsp brown sugar (or maple syrup), a dash of cayenne and red chili pepper flakes (if you want things spicy), 1 tsp salt and pepper to taste. Form into patties of your preferred size. Pan fry in a carbon steel or cast iron pan on medium heat until cooked through and golden, about 4-5 min on each side. Serve with fried eggs, salad, tucked into a flaky biscuit, rice, whatever you’d like. Real maple syrup as a dipping sauce won’t hurt either ✌?
