Homemade breakfast sausage for dinner ?

With your hands (gloved hands, maybe) lightly mix 2lbs. ground pork, some dried thyme, a bit of nutmeg, lots of minced fresh sage, 1 Tbsp brown sugar (or maple syrup), a dash of cayenne and red chili pepper flakes (if you want things spicy). Salt and pepper to taste. Form into patties of your preferred size. Fry on medium heat until cooked through and golden, about 4-5 min on each side. Serve with fried eggs, tucked into a flaky biscuit, rice, or whatever you’d like. Real maple syrup as a dipping sauce won’t hurt either.
